This simple Mediterranean bowl is filled with roasted chickpeas and onions, spiced hummus, a colourful veggie and tzatziki salad, nutritious bulgur, and contemporary dill. The person bowl parts might be ready individually and assembled when able to eat, making it the right meal-prep meal!

✨BULGUR NUTRITION✨
Bulgur is an historical entire grain that has a chewy texture and an earthy, nutty flavour. It’s simple and fast to cook dinner; and might be added to many dishes, together with salads, soups, and pilafs. Bulgur is full of varied vitamins and is an effective supply of manganese, magnesium, iron, and fibre. Give bulgur a strive on this scrumptious recipe! ⤵️

INGREDIENTS (serves 2):
★ 1 can chickpeas, drained & rinsed
★ 1 purple onion, thinly sliced
★ 2-Three tsp olive oil
★ 1 roma tomato, diced
★ 1 Persian cucumber, chopped
★ half cup hummus
★ 2 Tbsp selfmade or store-bought tzatziki dip (I bought mine at traderjoes)
★ half dry bulgur wheat
★ 1/Four ozfresh dill, minced
★ 1 Tbsp harissa powder
★ 2 tsp za’atar seasoning (non-obligatory)
★ Sea salt & black pepper to style
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INSTRUCTIONS:
1️⃣ Preheat the oven to 425ºF. Toss 3/Four of the sliced onion and the chickpeas with olive oil, 1 tsp harissa powder, 1 tsp za’atar seasoning, and a pinch of salt. Roast on a parchment-lined baking sheet till browned (for ~20-25 min).
2️⃣ In the meantime, in a small pot, mix bulgur with 1 cup water, half tsp harissa powder, and half tsp za’atar seasoning. Convey to a boil, then cowl and scale back warmth to low. Cook dinner till water is absorbed (~15 min).
3️⃣ Whereas the bulgur cooks, in a medium bowl, toss collectively the cucumber, tomato, the remaining onion, half the dill, and the tzatziki. Season with salt & pepper.
4️⃣ Place hummus in a small bowl, and stir in a pinch of harissa powder and half tsp za’atar seasoning.
5️⃣ Assemble by including a base of bulgur to the bowls and topping them with hummus, roasted chickpeas and onions, veggie and tzatziki salad, and the remaining contemporary dill. ENJOY!😋
